Grilled Chicken on Salad with Bananas

Okay, I've been promising a recipe section for a while.  This [drum roll please] is the first entry.  Light enough for lunch, heavy enough to keep paperwork secured to the desk.  Enjoy.

Ingredients:

1 piece boneless skinless chicken breast, cut in 1" pieces

1/4 bunch romaine lettuce leaves, washed and patted dry

1 whole banana, sliced

1 small tomato, diced

3 crackers (I'd go with Ritz)

1/8 cup mozzarella cheese, grated

1/8 teaspoon salt

1/3 teaspoon ground pepper

1/8 teaspoon oregano

1 teaspoon vanilla

4 tablespoons olive oil

Serving Size: 1 (or share, I'm not going to be policing this or anything)

Preparation time: Let's call it fifteen minutes -- just make sure that chicken is done. 

Step-by-Step: 

1. Season one side of chicken pieces with 1/2 of the salt, 1/3 of the ground pepper, and the oregano

2. Heat olive oil and vanilla on high heat in a medium pan

3. Lay chicken pieces seasoned side down in the pan

4. Reduce heat to medium and season the top of the chicken with the remaining salt and 1/3 of the pepper

5. Turn the chicken slices over after 2 or 3 minutes (when chicken has cooked halfway through)

6. While the chicken is cooking, shred the lettuce and toss with the tomato in a small bowl; arrange in the center of a plate

7. Place banana slices and crackers around the edge of the lettuce, leaving room in between for chicken slices; top it with the banana ends

8. When the chicken is done, place the pieces around the edge of the lettuce, between the banana slices and the crackers

9. Top with the shredded cheese, remainder of the pepper and dressing (to taste)
